Because sometimes it’s absolutely lashing it outside, your van feels like a damp sock, and the last thing you want to do is light the hob.
No-cook meals are a game-changer on rainy travel days when you’re tired, low on electricity or gas, or parked somewhere with no shelter to cook under. Whether you’re in a tent, campervan, or motorhome, these ideas are perfect for those can’t-be-arsed evenings. They’re quick, budget-friendly, and (of course) vegan!

🥪 No-Cook Camping Meal Ideas (Vegan-Friendly)
1. Pan con Tomate
- A European classic: tomatoes on toasted bread or tostadas with olive oil and garlic
- Use store-bought toasted bread or toast your own if not able to get tostadas
2. Bagel with Smashed Avocado
- Toasted or un-toasted bagel (I would recommend toasted!)
- Add sun-dried tomatoes, a pinch of garlic, and a drizzle of olive oil
- Can also top with sesame seeds or chilli flakes for extra flavour
3. Healthy Brown Bread Sammie That Slaps
- Thick slices of brown bread, hummus, grated carrot, fresh spinach, and sliced mushrooms
- Great cold, or lightly toasted if you’re feeling fancy
4. Wraps That Actually Fill You
- Hummus, grated carrot, spinach, beetroot & falafel
- Avocado, lime, black beans & salsa
- Peanut butter, banana, chia seeds & maple syrup (breakfast or dessert!)
5. Snack Boards / Mezze Lunches
- Crackers, hummus, olives, cherry tomatoes, cucumber, fruit, pickles
- Add tinned beans or marinated tofu if you want protein

- Pre-cooked pasta (make extra on a good day)
